Banana Weetabix muffin

My daughter loves Weetabix so much it can be hard to add some variety to breakfast time. So I decided to be inventive and create Weetabix recipes including this one – a breakfast muffin that combines her favourite wheat biscuits with a sweet treat!

Weetabix muffins

Using a breakfast favourite to create a simple and tasty alternative. From raisins to chocolate there are many exciting alternatives to suit all tastes.
Servings: 8 muffins

Ingredients
  

  • 2 small bananas
  • 2 wheat biscuits
  • 90 ml whole milk
  • 1 egg
  • 40 g butter, softened
  • 112 g self-raising flour
  • 1 tsp cinnamon
  • 2 tbsp chopped raisins

Method
 

  1. Preheat the oven to 180 deg.
  2. Mash the banana in a bowl until there are no lumps.
  3. Crush the wheat biscuits into the banana mix.
  4. Add the milk and let sit for 10 minutes.
  5. Add the egg and mix.
  6. In a separate bowl cream the butter and then add the flour and cinnamon.
  7. Add the banana mixture and fold in the raisins.
  8. Put in the oven for approximately 25 minutes. To check if cooked, insert a knife/ skewer into the centre and see if it comes out clean.

Notes

Other options – for a treat, I have added chocolate chips instead of raisins!
